Avocado cake
This was a first for us, but using the avocado produced a super moist and tasty cake.
We were inspired by the recipe below to give an avocado cake a go and we're pleased we did. We replaced the sugar with xylitol, of course, and you have to make a few conversions from American to UK measures, but the effort's worth it for the end result!
